Amazing & Easy Taco Soup

I forget sometimes how much I love soup...
It's a cheap, healthy, quick meal that always provides leftovers.

My soup of choice this week was:

Taco Soup
I used grass fed beef and all organic beans for this soup and the
total cost for this meal was $12 for 10 servings

Ingredients:
3 cans of beans (I used kidney, black, and pinto)
1 can stewed tomatoes
1 can corn kernels
1 can of water
1 small can diced green chilies
1/2 diced onion
1 lb. ground beef  (I used 1/2 lb and it was plenty!!!)
1 pkg reduced sodium taco seasoning
1 pkg ranch dressing mix 


Directions:
1. Brown the ground beef and the diced onions in a large soup pot over medium high heat.

2. Open all 3 cans of beans and drain the liquid.  Rinse beans in a colander with water. Add beans to pot.
 ***Canned beans are LOADED with sodium, mostly contained in the liquid.  By draining and rinsing canned beans you DRASTICALLY lower the sodium content of your meal.


3. Add corn, water, and diced green chilies to the pot.  Before adding the stewed tomatoes, I drain the liquid in the pot and then dump the tomatoes on a large cutting board and dice them very small, then add them to the pot. I hate chunky tomatoes in my soup :)

4. Add taco and ranch seasoning packets and stir to combine.  Add extra water to create your desired soup consistency.

5. Bring to a boil then reduce heat to lowest setting and let simmer for 20 minutes.

6. Enjoy with shredded sharp cheddar cheese, sour cream, and tortilla chips!

Why Spend More $$$ On Organic Meat?

About two years ago, I watched the documentary  " FOOD INC. " which exposes America's industrialized food system and its effect on our environment, health, & economy.  This was the first time I had ever stopped to think about where my food came from and how it was prepared. 

Then a few months later I watched " Food Matters " which is an AMAZING documentary explaining how food can be our medicine. 
With nutritionally-depleted foods, chemical additives and our tendency to rely upon pharmaceutical drugs to treat what's wrong with our malnourished bodies, it's no wonder that modern society is getting sicker. Food Matters sets about uncovering the trillion dollar worldwide 'sickness industry' and gives people some scientifically verifiable solutions for overcoming illness naturally.

Also after reading countless articles such as:

it has become clear to me that spending a few extra dollars on high quality meat is more than worth it.

"You are what you eat"
Well the same thing goes for cattle!
"If cattle eat a diet that they are not meant to consume, they become unhealthy. If you’re willing to buy beef from an animal that has been fed chemically treated corn because you think it’s the same stuff that comes from 100% pasture-raised cattle, think again. These two products are drastically different. After eating grass-fed beef, you can literally feel the difference in your own body"
As I have mentioned before I buy my 100% grass fed beef from http://www.desertrootsfarm.com/  They take orders about once a month and pick up is at Udder Delights in Gilbert. When buying beef it is crucial that it says 100% grass fed.  The label "Organic" does not mean grass fed and also "grass fed" does not mean 100% grass fed... i know it's confusing.  Grass fed cattle are sometime CORN finished!
Oh and guess what! Grass fed beef tastes SOOOO GOOD! Just an added bonus
I have not found a local place to buy order organic chicken but I buy mine at Trader Joes. Important labels to look for when buying chicken are: organic, free range or cage free, hormone free, and antibiotic free. Sprouts sells "all natural" chicken for cheap that is labels as farm fresh and containing no preservatives?? Says nothing about hormones or antibiotics... I'll stick with Trader Joes.
When it comes to improving your health with diet, buying organic meat is said to be the best first step!

Living Cleaner

Happy Wednesday everyone!
Hope all our healthy goals and resolutions are still in tact 11 days into this new year!

I wanted to post today about LIVING CLEANER
  We all know how important it is to EAT real food that contains REAL ingredients
But what about the ingredients in our laundry detergent? Or our shower cleaner? Or the wipes we use on our kitchen table?
Our bodies are affected by everything they come in contact with.  Especially the toxic chemicals and fumes contained in most household cleaners.  
Almost every company these days now offers a "GREEN & CLEAN" version of their product.  Some are better than others and some are way more expensive than others.
My checklist for cleaning products are:
*Affordable
*"Clean" Smell
*Plant-based
*No harsh chemicals

My absolute favorite brand is 
METHOD from Target
Their products fit all my requirements and I just LOVE their packaging. I'm a sucker for cute design

Winner, Waffles, and a Menu

Thanks to those of you who shared your goals with us!  I am still working on getting my resolutions all written down and planned out, so I will try and share those next week.  In the meantime…

Waffles.

Seriously, waffles.  I am dreaming about them as I type this.  My waffle-maker has been broken for years, and my nice mother-in-law bought me a new one for Christmas this year.  I whipped it out Saturday morning and couldn’t even find a waffle recipe in my book since it’s been so long.  After a quick glance at these from Smitten Kitchen, I crafted a modified version in my head and started baking.

Shortly after, my husband’s comment from the couch was, “Are these going to taste like gross healthy waffles?”  As soon as I heard that, I decided to keep one cup of the fluffy white flour in there to make him happy.  They were SO deliciously satisfying.  Please make them soon.  I will be.

Healthi{er} Waffles
adapted from Smitten Kitchen
2 cups flour (1 cup unbleached all purpose, 1 cup fresh ground whole wheat flour)
1/2 teaspoon salt
2 tablespoons sugar (I used xylitol…yummy.)
1 1/2 teaspoons baking soda
1 3/4 cups buttermilk*
2 tablespoons applesauce                                                                                                            
2 tablespoons butter or oil (coconut oil is my favorite)
1/2 teaspoon vanilla extract
Butter or cooking spray for brushing on waffle pan

Combine the dry ingredients. Mix together the buttermilk and the egg yolks, then stir in the applesauce, oil, and vanilla.

Brush the waffle iron lightly with butter or spray and preheat it. Stir the wet into the dry ingredients. Beat the egg whites with the electric mixer until they hold soft peaks. Stir them gently into the batter.
Ladle some batter onto the waffle iron and bake until the waffle is done.  Serve with peanut butter (all natural, of course) and a splash of real syrup for maximum enjoyment.  These also freeze well and are much better than Eggo waffles when toasted!

* The buttermilk can be substituted with 1 1/4 cups of milk, mixed with two tablespoons white vinegar, left to sit for 10 minutes.

Once again, a beautiful borrowed picture from someone else’s waffles.  Mine actually did look just like these golden, crispy, quarter circles.  And Kim, you will be happy to know that these just happen to be GLUTEN-FREE waffles from Honest to Nod and they look amazing.  Please try them asap.  {Kim is awesome and finally started her gluten-free diet last week to see if it helps with some of her issues she has been having.  More to come on that later!  You can do it sis!}

And now for that menu thing I have been not very good at lately.  Here is what I am thinking for dinners this week…

Turkey Lurkey Pot Pie – going to make this with my frozen smoked turkey leftovers that my chef brother-in-law made for us on New Years Eve.

Slow Cooker Jambalaya – have some green peppers from my dad’s garden I want to use and I am feeling like a rice dish.  I will probably make a few adaptations and will report back on how it goes.

Lentil Tostadas – Seriously how cute is this chalkboard ingredient list.  I can’t get enough of it and am looking forward to reading this new organic blog I just found, The Lovely Cupboard.

Happy New Year!


Happy New Year everyone!  
As sad as I am to say goodbye to the holiday season...
I am so READY for the new year

I am ready to make changes and have goals,

Make lists and get organized,

and most importantly... EAT healthier and EXERCISE more!

I hope all of you have discovered the best way to view healthy eating and exercise.
It should not be a punishment, it should not be a restriction, and it should not be ALL for the purpose of 
LOSING WEIGHT!

Try to look at food differently this year.  Look at it as your medicine, your energy supply, your skin care, and your weight loss supplement.
Look at healthy food as an adventure! An experiment!
Look at a list of vegetables and write down how many you have NEVER tried.
Make it a goal to try new foods

As for exercise:
Take a look at the MANY reasons to just get up and WALK

The next time you think about exercising and become overwhelmed... realize this:

No matter WHAT you do... ANY exercise is better than NO exercise.
This Year think of exercise as your weight loss buddy, your disease prevention, your mood booster, your energy booster, your ticket to a better night's sleep, and your key to feeling confident.

Choose one goal for each week and put all your energy and focus on that one thing!  {We highly recommend becoming a reader of the Word of Wisdom Living blog, which is now on Facebook!  They have made it easy by organizing healthy living into 52 weekly changes.  Here is the first one, and just add a new one when you are ready.  The research put into this blog is amazing, so share it with everyone you know!}

Also included in the upper right corner is the new Healthy Eating Plate from HARVARD, which we like even better than the one from the USDA!
