Kristen's Menu- Week of May 1st

Breakfasts:
Best Oatmeal Ever  (I am in love with Steel Cut OatsSo is Kate.  Olivia has texture issues with oatmeal.  I understand.  I didn't start liking oatmeal until last year.)
Whole Wheat Toast with a spread of TJ's Mango Butter (Can' t wait to try this new seasonal item.)
Favorite Banana Muffins (I love Trainer Momma's recipes and after trying tons of "healthy" banana bread recipes, this is by far our favorite.  I use TJ's Bran Flakes and of course I will throw in a few of Ghirardelli's 60% cocoa chocolate chips.)
TJ's Multigrain Waffles with Strawberries (and a drizzle of Log Cabin's all-natural syrup...)

Lunches:
Turkey Meatball Subs
Ham and Pesto Melts

(Just recently discovered that Trader Joe's has a recipe section on their website, I am in love.)
Whatever else we can whip up around here...
 
Dinners:
W.O.W. Enchiladas and Refried Beans  (These enchiladas will truly W.O.W. you.  I used 505 Green Enchilada Sauce from Wal-Mart.  Tanner said it was like eating at a Mexican restaurant.  W.O.W.)
TJ's BBQ Chicken Pizza and Strawberry Spinach Salad
Chicken Stir-Fry  (Not sure why this one is a different color.  Must be bedtime...)

Supplements:  (don't forget!)
Multi-Vitamins and Omega 3 Oil for all, Iron for me, and Protein Powder if I can choke it down...  :)

Cheesy Chicken & Wild Rice Casserole

 3 Tablespoons extra virgin olive oil
1 medium onion, finely diced
3 stalks celery, finely diced
3 carrots, peeled and diced
2 Tablespoons fresh minced garlic
2 Cups shredded, cooked chicken breast
2 Cups steamed white rice
16 oz prepared wild rice (I get mine at Trader Joes, LOVE it)
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 teaspoon garlic salt

Cheese Sauce
4 Tablespoons butter
1/4 Cup all purpose flour
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
2 Cups chicken broth
1/2 c. shredded cheddar cheese
*1/2 c. shredded cheese on top

(original recipe calls for ALOT more cheese, totally don't need it, I promise)
1.  Preheat oven to 350 degrees F.  Heat oil into a medium dutch oven or pot over medium heat.  Saute onion, celery and carrots until softened, about 10 minutes.  Stir in garlic and cook for 1 minute.  Stir in chicken, both rices, salt, pepper and garlic salt.  Reduce heat to low.
2.  To prepare cheese sauce melt butter into a medium saucepan over medium high heat.  Whisk in flour, salt and pepper then slowly pour in chicken broth whisking continuously.  Whisk until thick and nearly boiling then stir in cheese until melted.  Pour cheese sauce into rice mixture then transfer to a 9×13 inch baking dish. Top with additional cheddar cheese and bake for 25-30 minutes or until cheese is melted through.  Serve.
8-10 servings

TASTY tostadas


 Ingredients:
-1 pound all natural LEAN ground beef (grass fed beef is best)
- 1 can Rositas NO FAT refried beans
- Lettuce
- Tomatoes
- Cheese (oh so little amount)
- Trader Joe's PICO DE GALLO  or HOMEMADE PICO
- Tostada shells or corn tortillas

*Brown the ground beef, heat up the beans, chop your veggies, and make your pico or use Trader Joe's all natural pico de gallo. Top your tostada shells with all the goodness and a baby amount of cheese. NO sour cream or fatty guacamole needed here! 

**And if you want to be SUPER CLEAN you can pop a few corn tortillas in the oven at 350 degrees for 4-5 minutes on each side, then let them cool for 10 minutes. They will harden as they cool and you will avoid the fatty process of frying the tortillas in vegetable oil :)

Orange Chicken & Brown Rice w/ Veggies



Ingredients
- Trader Joe's Frozen Mandarin Orange Chicken
- Trader Joe's Fully Cooked Brown Rice
- 1 c. steamed broccoli
- 1/4 c. carrots cut into matchsticks

*Cook chicken according to package instructions. Add steamed broccoli, carrots, and cooked chicken to a bowl of heated brown rice and top with Mandarin Orange Sauce that comes with the chicken. Spoon mixture into lettuce cups or eat alone! Either way is delicious.

Simple, CLEAN Italian Dinner

Whole Wheat Spaghetti & Romaine Salad
This clean meal contains no meat, cheese, garlic bread or butter.
Don't need 'em cuz it's so simple, fresh, and delicious!

 SPAGHETTI
- 1 package Trader Joe's Organic Whole Wheat Spaghetti Noodles
- 1 can Trader Joe's Tomato Basil Marinara Sauce

 SALAD
- Romaine Lettuce
- Green onions
- Trader Joe's Shredded Carrots
- Tomatoes
- Boiled eggs
- Organic Fat Free Croutons (Sprouts)
- CleanER Ranch Dressing or buy OLIVE GARDEN DRESSING!

RANCH DRESSING
- 1 c. lowfat buttermilk
- 1/2 c. plain greek yogurt
- 1/2 c. mayo
- 1 packet hidden valley buttermilk ranch mix

*Cook Spaghetti noodles according to package instructions, drain noodles and add enough marinara sauce to lightly coat the noodles. 
*Chop lettuce and top with veggies, croutons, and dressing!
*Enjoy an EASY Clean Meal!
